INGREDIENTS
1 15oz can black beans, drained 1 tsp vegetable oil 1/2 c chopped onion 2 garlic cloves, minced 1/2 diced tomato 1/3 c mild picante sauce 1/2 tsp cumin 1/2 tsp chili powder 1/4 c shredded reduced fat monterey jack cheese 1/4 chopped parsley or cilantro 1 tbsp lime juice
DIRECTIONS
1. Place beans in bowl, partially mash 2. Heat oil in nonstick skillet over med heat, add garlic and onion and saute 4 min until tender 3. add beans, tomato, picante sauce, cumin and chili powder and cook 5 min until thick, stirring constantly 4. Remove from heat, add cheese, cilantro and lime juice 5. Serve warm with fat free tortilla chips
