INGREDIENTS
1 tbsp olive oil 4 boneless, skinless chicken breasts 1/2 tsp salt 1/4 tsp blk pepper 1/3 c chicken broth 2 tbsp dry white wine 1 1/2 lemon juice 1/4 c chopped fresh parsley 1 tbsp capers
DIRECTIONS
1. heat oil in nonstick skillet over med-high heat 2. Place each chicken breast between 2 sheets heavy duty plastic wrap and pound to 1/2 inch thick. Sprinkle with salt and pepper. Add chicken to pan and cook 4 min on each side until done. Remove from pan. 3. Add broth, wine, and lemon juice to pan and reduce heat and simmer 1 min. Stir in parsley and capers. Spoon sauce over chicken.
